1 whole grain pita, cut in half and opened
Inside the pockets layer:
1 small grated carrot
1 small grated beet
a few slices of red or green onion
4 sliced raw mushrooms
1 avocado, sliced
1 sliced tomato, optional
Drizzle with a bit of lemon juice.
This is a delicious mostly raw lunch!
